Lang Vong green sticky rice – Gift of the Village of Vietnam

Lang Vong green sticky rice is a culinary specialties of Vietnam. This is a typical product of Vong village (Hau hamlet), about 5-6 km from central Hanoi, now is Dich Vong Hau ward, Cau Giay district, Hanoi.

The story of Lang Vong green sticky rice

Coming from the legend: On a fall of a thousand years ago, when the rice began to turn yellow, it rained heavily, big winds, broken dykes, the highest rice field also drowned . People around the Vong village to cut the young rice to dry roasted, eat gradually and resist hunger. Unbelievably, the product reluctantly has its own flavor, very attractive, making the Vong village people often do to eat every fall.

The process to make Lang Vong green sticky rice

To keep the heat, the oven must be covered with coal slag with a thickness of 15cm on the upper part and  40 cm thickness of below the foot, but not burned with coal (too much heat) that must be used firewood (easy to adjust fire). At first roasting with medium fire, when the grain is white again, then reduce the fire. Roasted rice must be stirred continuously, so that is same heat for everything. Spend 30 minutes then try it. Each time trying to pick up five seeds placed on a piece of wood, pressing by your thumbs on each grain.

After rice are roasted, cooled, put into the mortar, each batch of about 5 kg. For about ten minutes, the husk is exposed, the husk is gone, the ejaculation, up to 7 times, each time depending on the dried or wet nuggets that measures. The fifth retreat must be divided into 3 types: nuggets, young nuggets and nuggets and separate each type in the last two. The finished specimen is wrapped in two layers of leaves.
